    What sweetener is best for gluten & fructose intolerance?

    A friend is diabetic and has gluten & fructose intolerance to most foods, is on strict fruits & vegetables. Just wondering what artificial sweetener is best without the fructose and would be suitable. Is not allowed juices syrups etc. Trying to find a cake recipe for him, and its proving to be very difficult.

    I would try a sweetener called xylitol. It is a  natural sweetener that comes from a plant and has no affect on your sugar levels It is much nicer than stevia and does not have the sweetener aftertaste. You substitute it spoon for spoon. I have used it in baking and cooking and love it, as one of my family members has type 1 diabetes and ceoliacs. They have had no issue with this sweetener. You can find it in most healthfood stores.

    Xylitol is on the “Do not have” list on the FODMAP diet, so be aware. I made my own sweetner with a corn based maltodextrin which I know is not the best thing to consume, blended with Stevia (Reb A 98%) and Magnasweet (which is good for getting rid of the bitter after taste.) I have used it to bake, but still need to get the ratios right.
